Gilbert attended New York University. After college, she worked at several jobs, including trail cook, waitress and bartender, influenced by Earnest Hemingway’s early works. Her debut short story “Pilgrims” was published in 1993 by Esquire. The magazine had not published a piece by an unpublished author since Norman Mailer.
She then wrote for several national magazines, including The New York Times Magazine, Allure, Spin and GQ. The movie 2000 movie Coyote Ugly was based on her 1997 GQ article “The Muse of the Coyote-Ugly Saloon,” a memoir of her time spent at the first Coyote Ugly as a bartender.
